DESCRIPTION:

Enjoy a quick and healthy Air Fryer Spinach, Roasted Red Pepper, and Goat Cheese Omelette. Light, fluffy, and ready in just 15 minutes. The perfect breakfast or light meal.

INGREDIENTS:

Olive oil cooking spray
3 large eggs
2 tbsp. (30ml) whole milk
Kosher salt, to taste
Freshly ground black pepper, to taste
3 tbsp. thawed, well-squeezed chopped frozen spinach
3 tbsp. finely chopped roasted red peppers
1 tbsp. crumbled goat cheese


METHOD:

  1. Lightly grease a 7" nonstick round cake pan with cooking spray.
  2. In a medium bowl, whisk eggs, milk, a pinch of salt, and a few grinds of pepper until well combined.
  3. Pour the mixture into the prepared pan. Top one half with spinach and roasted red peppers.
  4. Place the pan into the air fryer basket and cook at 180°C for 6–8 minutes, until the eggs are just set.
  5. Remove from the air fryer, sprinkle goat cheese over the vegetables, then fold the omelette over with a spatula. Slide onto a plate and serve warm.
