DESCRIPTION:
Enjoy a quick and healthy Air Fryer Spinach, Roasted Red Pepper, and Goat Cheese Omelette. Light, fluffy, and ready in just 15 minutes. The perfect breakfast or light meal.
INGREDIENTS:
Olive oil cooking spray
3 large eggs
2 tbsp. (30ml) whole milk
Kosher salt, to taste
Freshly ground black pepper, to taste
3 tbsp. thawed, well-squeezed chopped frozen spinach
3 tbsp. finely chopped roasted red peppers
1 tbsp. crumbled goat cheese
METHOD:
- Lightly grease a 7" nonstick round cake pan with cooking spray.
- In a medium bowl, whisk eggs, milk, a pinch of salt, and a few grinds of pepper until well combined.
- Pour the mixture into the prepared pan. Top one half with spinach and roasted red peppers.
- Place the pan into the air fryer basket and cook at 180°C for 6–8 minutes, until the eggs are just set.
- Remove from the air fryer, sprinkle goat cheese over the vegetables, then fold the omelette over with a spatula. Slide onto a plate and serve warm.
